Marinara Egg Scramble $3.47



This easy egg dish can be served for breakfast, lunch or dinner. I made it for lunch today, and thought it quite tasty and easy to prepare. I bought 2 dozen eggs Sunday and therefore want to be creative yet healthy with a bunch of egg dishes. I found this off the internet on the www.allrecipes.com site. This recipe serves 4
and is high in protein, iron and zinc from the eggs and both tomatoes and eggs contain large amounts of vitamin E, which is a great antioxident, not to mention tomatoes are high in vitamin C and the highest source of lycopenes around.
Ingredients
serves 4
6 eggs .48
1 can diced tomato $1.99
2 tsp olive oil .20
2 tsp garlic powder .10
1 tablespoon dried onion .20
salt and pepper to taste .10
4 slices whole wheat bread optional .40

heat oil in skillet on medium
add dried onion, garlic and saute for 5 minutes
add entire contents of tomato can
add salt and pepper, stir and simmer for 30 minutes
crack and whisk eggs until a smooth consistency
turn up heat on sauce
pour in eggs
stir constantly for 5-10 minutes until egg is completely cooked
serve over toast
