Black Olive Walnut Pesto over Pasta $4.53
I found this interesting recipe online and it turned out to be delicious. Im not surprised because I love black olives and while walnuts arent my favorite nut, I do like them, and eat them often because they have been ranked by many nutritionists and websites as a superfood, infact they have been said to be the most powerful of all the nut family. Aside from containing vitamins A and B(thiamin) fiber, and protein, they are a huge supplier of omega 3's which aids in keeping the heart healthy, aiding in better mental function and controlling arthritis and my personal favorite- they serve a a great antioxident for our bodies, which means consumption of walnuts can help keep henious cancer cells at bay. Here is the recipe, and bare in mind this pesto which means paste( and it will look kindof pastey) is a really funny color for food, and may appear kind of unappealing like dirt or something, but it is so good, I could see it in a 5star resturaunt.
serves 4
12 ounces pasta noodles(doesnt matter shape, whole wheat always better, but not always available)$1.50
cu1/4 cup black olives pitted .70
1/2 cup walnuts$1.21
1/4 cup olive oil .30
1 tablespoon garlic powder.20
1 tablespoon dried parsley.20
pepper(no salt necessary).02
1/4 cup parm cheese .40
red pepper flakes optional
boil noodles according to instruction and keep 1/4 cup starchy water for pesto
in blender combine olives, walnuts,parm cheese, olive oil and spices
blend until forms a nice consistent paste
drain pasta noodles, and add 1/4 cup of water to pesto
mix in pasta with noodles, making sure to coat noodles evenly with pesto
serve with parm cheese optional
red pepper flakes optional
