This was a bit of a struggle because I was working with a crust that wasnt going to have yeast in it. I found a recipe on the internet that was made with baking soda, and I gave it a shot(3 times) The issue the first two times was the baking powder caused the dough to rise too much. The first time I rolled out the dough and baked it it rose like a brownie, second time more like a thick stuffed pizza crust,so third time was the charm, and I rolled the dough out paper thin, and that worked, the crust was not doughy, but crunchy. I chose to make a simple cheese pizza, but in the future I will experiment with other toppings.
ingredients
crust
2 1/2 cup flour .70
2 tsp baking soda .10
1 tbsp olive oil .60
3/4-1 cup water
combine ingredients and mix until a dough ball is formed
flour hands and pans(note this is enough dough for two pizza crusts, if only one is needed, cut ingredients in half)
I used a round pan, but cookie sheet will do as well
cook for 20 minutes at 400
Pizza sauce and topping
1 cup tomato sauce .99
1 tsp olive oil .20
1 tsp garlic salt .05
1 cup shredded mozzarella $1.36
heat oil in pan on low add tomato sauce and garlic salt, simmer for 5-10 minutes
remove crust from oven and spread sauce evenly on pizza
top with mozzarella evenly
bake for 20 more minutes until cheese is melted
slice and serve

Green Olive Diced Tomato Flatbread Pizza
If you like thin crust pizza, this will be the crust for you. They are flat breads and available at my local convenience store in white flour and wholewheat, I, of course, always go for the wholewheat. There are so many different pizzas that can be made with flat breads. Tonight I chose one of my favorite combos, green olives and tomatoes.
If a thin crust pizza is what you are looking for, then flat bread is for you. Flat bread is available at my local convenience store, and is so easy to use for pizza and the options are endless. One of my favorite combos is tomato and olive, topped with cheese, I'm in heaven. I always use wholewheat flat bread and really, 1 whole flat bread pizza is big enough for two people.
1 flat bread
1/2 cup diced tomato .45
1/4 cup diced green olives
1/4 cup shredded cheddar cheese(mozzarella) .34
2 tsp canola or olive oil .20
heat oil in skillet, add tomatoes and diced green olives, saute for 5 minutes
place flat bread on pan, top with tomato and olive combo, spread evenly
sprinkle with cheddar cheese evenly
place on tray and bake for 10 minutes until cheese is melted
cut into four pieces and serve

Flatbread Pizza $1.63
My Walgreens just started carrying Flatbreads! Imaginie my excitement when I went in to buy bread, and there on the shelf was sitting whole wheat Flatbreads!! Flatbreads open up so many possibilities for me-wraps, burritos, calzone, ofcourse, but more importantly- Pizza!! I already love thin crust pizza, because I love the crunch and ofcouse it doesnt hurt to have a bit less carb intake, so the flatbread is perfect. This pizza is quick, healthy and delicious.
I love these flats, there is calcium, protein and ofcourse tons of fiber in each, couple that with the antioxidents-vitamin E, C and beta carotene in amazing tomatoes, calcium and protein in cheese, and vitamin E and iron in olives! what are we missing? oh yes, we are missing Trans fats, but ofcourse we are happy about that!!!
